Màquina&Tabla is a journey through the best terroirs of the Castilla y León regions, from the terraces of Gredos to the slopes of Bierzo, crossing the plains of Duero. We seek purity and delicacy in our cultivation, vinification and aging; respecting the singularity of the vines to produce vibrant wines that pair perfectly with food.

Páramos del Duero, D.O. Toro

Màquina&Tabla red

Garnacha and Tinta de Toro. In Toro, Valladolid, on the River Duero's north bank, we leased 8ha of old ungrafted vines of Tinta de Toro and Garnacha, grown in biodynamic deep sands. (Demeter certified).

The harvest is done in several passes with the idea of harvesting to perfect maturity. We barrel 50% de-stemmed, whole bunches of grapes, without adding any foreign element and in low temperatures for more than six weeks.

The aging is in oak barrels until the next harvest.

 

"Staring at the Toro Duero, we felt as if we were in Chateauneauf-du-Pâpe; the smoothness and fragrance of the old Garnachas playing with the ungrafted weight and structure of the Tinta vine, maybe a hint of white, a tiny crop… Volume and silk.

Laderas del Sil, D.O. Bierzo

Laderas de Leonila red

Mencía. At the Galician Valdeorras border with El Bierzo, looking over the valley that is divided by the Burbia (a Sil River tributary), we have leased 3ha of old Mencía vines (plus some Garnacha and Doña Blanca), facing the northeast and cultivated on scattered slate and clay with slate soil. We ferment the grape bunches de-stemmed, with no added external element and at generally low temperatures during a few weeks. The aging continues in barrels and concrete tanks until the next harvest.

Páramos del Duero, D.O. Toro

Páramos de Nicasia red

Tinta de Toro. In the Zamoran Toro, on the south bank of the Duero River, we have leased 3ha of old, ungrafted Tinta de Toro vines, which we grow under large stones. We ferment the grapes without stems, with no added external element and at generally low temperatures during a few weeks. The aging continues in barrels and concrete tanks until the next harvest

Terrazas de Gredos, AA.VV. Garnachas de Gredos

Terrazas de Serapia red

Garnacha. In the land surrounding the eastern part of the Sierra de Gredos, we have leased 3ha of old Garnacha vines, cultivated in granite soils on terraces over 900m in altitude. We ferment the grape bunches de-stemmed, with no added external element and at generally low temperatures during a few weeks. The aging continues in barrels and concrete tanks until the next harvestt.
